Pastry, Four-Layer Pie - 2 tablespoons butter or margarine
- 1-1/2 cups fruit, (pineapple, bananas, etc.)
- 2 Graham Cracker squares
- 1 small package vanilla pudding and pie filling
- 1-3/4 cups milk
- 1-1/2 cups ricotta cheese
- 3 packets Splenda® or an equivalent amount of sugar
- 1 teaspoon vanilla
- 1 cup Cool Whip®
- Put graham crackers in blender or food processor to make crumbs. Mix with butter or margarine and mash out into pie plate. Bake at 350°F. for 8 to10 minutes. Cool.
- Prepare pudding according to package directions, using the milk. Set aside.
- In a small bowl, mix the ricotta cheese, Splenda® or sugar and vanilla. Set aside.
- Layer fruit, pudding, cheese mixture, and whipped topping in pie plate. Chill well before serving.
