Salad, Mandarin Salad w/Sweet-Sour Dressing


  • 1/4 cup sliced almonds
  • 1 tablespoon plus 1 teaspoon sugar
  • 1 bunch red leaf lettuce, washed, dried, and torn into bite-size pieces or 1 small head red leaf and romaine heart mix
  • 2 medium stalks celery, chopped (about 1 cup)
  • 2 green onions, with tops thinly sliced
  • 1 (11-ounce) can mandarin orange segments, drained
  • Sweet-Sour Dressing: 1/4 cup vegetable or olive oil  
  • 2 tablespoon sugar
  • 2 tablespoons vinegar
  • 1 tablespoon snipped parsley
  • 1/2 teaspoon salt
  • Dash of freshly ground pepper
  • Dash of red pepper sauce
  1. Brown almonds and sugar over low heat, stirring constantly, until sugar is melted and almonds are coated; cool on plate then beak apart.
  2. Shake together all the dressing ingredients in a tightly covered jar and refrigerate till needed.
  3. In a salad bowl, toss together lettuce, celery, onions, oranges, and almonds. Pour dressing over mixture and toss till well coated.

Serves 6 to 8
