Salad, Mandarin Salad w/Sweet-Sour Dressing - 1/4 cup sliced almonds
- 1 tablespoon plus 1 teaspoon sugar
- 1 bunch red leaf lettuce, washed, dried, and torn into bite-size pieces or 1 small head red leaf and romaine heart mix
- 2 medium stalks celery, chopped (about 1 cup)
- 2 green onions, with tops thinly sliced
- 1 (11-ounce) can mandarin orange segments, drained
- Sweet-Sour Dressing: 1/4 cup vegetable or olive oil
- 2 tablespoon sugar
- 2 tablespoons vinegar
- 1 tablespoon snipped parsley
- 1/2 teaspoon salt
- Dash of freshly ground pepper
- Dash of red pepper sauce
- Brown almonds and sugar over low heat, stirring constantly, until sugar is melted and almonds are coated; cool on plate then beak apart.
- Shake together all the dressing ingredients in a tightly covered jar and refrigerate till needed.
- In a salad bowl, toss together lettuce, celery, onions, oranges, and almonds. Pour dressing over mixture and toss till well coated.
