Soup, Succotash Soup - 2 tablespoons butter
- 1 onion, finely chopped
- 2 cups leftover succotash
- 4 cups chicken or turkey stock
- 1 can diced tomatoes with their liquid (optional)
- 1 cup milk, half-and-half, or heavy cream (optional)
- Crumbled bacon for garnish (optional)
- Chopped fresh chives for garnish (optional) T
- oasted croutons (optional)
- Heat the butter in a large pot over moderate heat and sauté the onion until tender but not brown, about 5 minutes.
- Add the succotash and chicken stock and bring to a boil. Add canned tomatoes if desired.
- Purée the soup, if desired and add the milk, if desired. Garnish with crumbled bacon, fresh chives, and/or croutons, if desired.
