  • 2/3 pound boneless pork, cut into 1/2-inch cubes
  • 1 to 2 tablespoons butter
  • 1 (15-ounce) can chili-style beans
  • 1 can Cheddar cheese or other cream-style soup, undiluted
  • 1 (14-ounce) can hot and spicy crushed tomatoes
  • 1/2 (4-ounce) can chopped green chilies
  • 1 cup Minute® rice
  • 1/4 cup chicken broth, beef broth or water
  • 1/4 cup salsa (mild, medium or hot to taste)
  • Shredded Cheddar cheese for topping (optional)  
  1. In a large skillet, sauté the pork cubes in butter until no longer pink.
  2. Add the remaining ingredients. Cover and cook, stirring occasionally, until bubbly.
  3. Turn into an ungreased 2-quart baking dish in a preheated 350°F. oven. Bake, uncovered, for 30 minutes until reduced a bit and bubbly. Sprinkle with shredded Cheddar cheese, if desired, and bake for 5 minutes longer or until cheese melts.  

Serves 2

If you'd like to use the chops...
Go ahead and brown the bone-in chops in the stove top pan. Simply move the bones and all to the baking dish.

Using fresh hot or sweet peppers, any will work for this one..... The sky is the limit for this one...
Slice thin and saute with the pork. If using hot peppers. USE PLASTIC GLOVES TO PROTECT YOUR HANDS.
Thin Sliced Onion would be good for this also... I was out of onions. Dried onions will add salt to the recipe, equal amounts for your choices.

The different soup choices are..
Cream of mushroom/potato/chicken with frozen stir-fry veggies. Saute the frozen veggies with the pork.. No oil needed for that. The veggies will create enough liquid for this. The sprinkle of cheese might be a soft mild cheese.. Maybe a white cheddar. Even abit of goat or ricotta
Pizza sauce.. I might even add 1/4 pound sliced or diced peppernori. Use a nice Pepper Jack or sharp cheedar cheese.
Any style pizza cheese....
You certianly can make this with a sauerkaut idea.
Hmm, Maybe that will come to the # 3.....# 4...
Yet, the sweeter peppers, leaving out the hot peppers... And 1 small can undrained kraut with cream of potato and white/ yellow mild  cheddar. Just some ideas.
Remember...
All fresh meats are easier to cut into cubes or slice with a nice sharp knife if semi frozen.
If you have bought the meat today and want to make this right now...
You can do something else for 15-20 minutes while your package of meat gets cold in your freezer.  Buying already cubed meat is spendy, with the gas prices as they are... This is an easy way to safe a few pennies. Besides, you can cut the meat into the cubes or pieces for your family!

As I said..
This recipe was HOT..
If I were to make it again..
I'd change the hot crushed tomatoes to plain crushed tomatoes.
For my family, I'd use fresh.. Yet, for NON-COOKS.. Canned will work great.
I used about 1 1/2 cans of green chilies. I'd use less.. This was hot..
I also used the hot salsa. I probably would keep this one. Yet, this will create a hot dish.
I did use Minute Rice, Yet.. ANY BOXED STYLE PREPARED RICE WILL WORK GREAT. A BROWN RICE..
The boxed style rice will add more salt to the dish.
I'd use just the RICE MIXTURE FOR THIS DISH AND SAVE THE FLAVOR PACKET FOR ANOTHER MEAL OR SOUP.
Just a few more ideas.
