Isurfin:  My favorite Blue Cheese Dressing recipe was given to me years ago by a dear friend, Carolyn Sayre.  She served it on hamburgers at a cookout one day and everyone asked for the recipe.  (She was not able to give specific amounts, so it depends on your artistry, but it always turns out great for me.)

Bleu Cheese Dressing a la Carolyn
Mix 1 tub soft cream cheese and Danish bleu cheese with a fork.  (Use more bleu cheese than cream cheese)  Add a little sour cream or milk for consistency.  Gradually add, while tasting, cider vinegar or lemon juice, white pepper, and garlic juice.

Here's another.  This one I have inserted it in our Salads and Dressing category list.

Blue Cheese Dressing
6 ounces blue cheese
4 ounces cream cheese, softened
1 cup salad oil
2 tablespoons cider vinegar
1 teaspoon sugar
1/2 teaspoon paprika

  1. Combine the blue cheese and softened cream cheese.
  2. Beat in the salad oil and add the remaining ingredients.

Yields about 2-1/2 cups

And just to make sure, try this one....

Roquefort or Blue Cheese Dressing

Combine 1/2 cup mayonnaise, 1/2 cup sour cream, 3 tablespoons millk, 2 tablespoons lemon juice, 2/3 cups crumbled Roquefort or blue cheese.  Yields 1-1/3 cups.

Good luck.. Let us know if you need more.  Maybe some other noncooks have some good suggestions.  McClug
