Hello everyone -
 
I'm new to this site and I'm searching for a certain marinade for babyback ribs.  I made this marinade a while back, but I can't remember which cooking site I got it from.  All I can remember is that it had chopped garlic, lemon juice and vinegar - I also had to cook it for a while on top of the stove for a short time, but that's all I remember about it. It's not the kind of marinade you soak the meat in for a few hours, it's the type you use as you're grilling the meat.
 
Any help would be very much appreciated, and thank you ahead of time.

Hi Dani, Welcome to Recipes for Noncooks.  I just saw your message today and it's probably already too late, but I picked up a few marinade recipes using vinegar, lemon juice and garlic.  I couldn't find anything that met all your critia, but these might help jog your memory.  Go to New Recipes or to the Sauce Etc.  category list and see:

  • Sauce, Vinaigrette Marinade
  • Sauce, Marinade for Ribs
  • Sauce, Barbecue Sauce, Jim's Jack

(I'm sure that Jim's Jack Sauce is way out of reach for a Noncook, but it sounds so good I included it for fun.)

Go to Recipe Archive at http://recipes.alastra.com and see Marinade 07, Marinade 14 and Marinade for Pork 06.  (I couldn't copy them for you because the site is not in the public domain and they forbid any reproduction of their recipes.  )

P. S. It just occured to me that I may have been making the wrong search.  From your description, it seems you're looking for a basting sauce rather than a marinade.  I think I'll give that a whirl and see if I get dizzy.  Have a great Labor Day weekend.  TTYL, McClug, Manager and Sauce Searcher-in-Chief

Dani, I went hunting for a basting sauce and came up with something that sounds promising:
 
Smokey's Scratch Basting Sauce
1 medium onion, choped
2 garlic cloves, crushed
2 medium carrots, cut into chunks
2 stalks celery with leaves, coarsely chopped
2 bay leaves
1 heaping teaspoon crushed thyme
1 lemon, juiced and whole lemon included
1 heaping tablespoon non-iodized salt
1 heaping tablespoon freshly ground black pepper
1 quart water
 
Simmer the above ingredients in a stainless pot for 30 minutes. Add:
 
1/2 pound unsalted butter
1 pint apple cider vinegar
 
Strain sauce.  Baste meat and let dry and baste again before placing on grill.  Baste at 10 to 15 minute intervals while cooking.

Hi McClug:
Yes, I got your email with the basting sauce recipe, and I want to thank you again for your help.  Some of those basting sauces look fantastic, and I'm going to have fun trying them.  I'm actually only a NonCook in the summer time when it's too hot to be bothered with the stove and oven (and sometimes in the Winter, when all I want is a quick meal and to get the heck out of the kitchen!)    Usually I enjoy cooking homemede meals during the cold season, and I've collected many recipes over the years -- I'm looking forward to sharing (and being shared with), helpful cooking tips and recipes with everyone in here.  Hope everybody had a fun and safe Labor Day Weekend!
