I would like a nice and EASY bluberry muffin recipe.
It's got to be easy or I will mess it up somehow.

LeeAnn, this is the easiest Blueberry Muffin Recipe I could find.  If you would rather not use a mix, I also included two recipes from scratch.  In that case they are all pretty much the same.  Good Luck.  (We also have a good recipe in our Breads Archive, Page 2.)
 
Yummy Blueberry Muffins (Easy) 
  • 2 packages Jiffy® Blueberry Muffin Mix
  • 2 eggs
  • 1/2 cup milk
  • 4 ounces cream cheese
  • 1 teaspoon vanilla  
  1. Preheat oven to 400°F. Grease muffin tin or use paper liners. 
  2. Cut cream cheese into muffin mix. Add eggs, milk and vanilla.
  3. Pour into prepared muffin pan. Bake at 400°F. for 15 to 18 minutes. 

Yields 12 muffins

Blueberry Muffins (Easy)  

  • 1/4 cup butter
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 2 cups fresh or frozen blueberries  
  1. Preheat oven to 350 degrees F. Grease and flour muffin pan (or use paper liners).
  2. Beat together butter, eggs, salt, and sugar.
  3. Mix flour with baking powder and sift into first mixture, alternating with milk. Blend in vanilla. Add blueberries.
  4. Pour into muffin pan and bake for 25 minutes.

Here's one more that sounds easy for good measure:

Blueberry Muffins (Easy)

  • 2 cups plain flour
  • 1/2 cups sugar
  • 1 tablespoon double acting baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup salad oil
  • 3/4 to 1 cup blueberries
  1. Combine first 7 ingredients.  Stir in blueberries.
  2. Grease a miniature muffin pan (20 to 24 muffin cups)
  3. Bake at 400 degrees F. for 20 to 25 minutes
