I am taking my mother and 7 kids camping for 5 days and I am looking for ways to feed everyone. Does anyone have any recipes that are portable and preferable able to prepare ahead of time and freeze that can thaw in the cooler while we camp?

Hi Lucy, I found some goodies for you.

Most camping recipe directions tell you how to cook outdoors, but any of these can be prepared ahead of time, frozen and packed.

The following is from http://www.camprecipes.com/

Camp Tuna and Mac

 • 1 box Kraft® Deluxe Macaroni and Cheese
 • 1 can tuna, drained
 • Salt and pepper to taste

Boil the amount of water indicated on the macaroni box in a pot. Add pasta and cook until tender. Add cheese packet, tuna, and salt and pepper. Stir. You could also add celery or onion, if desired.

This one is from http://www.thecampingsource.com/

Fish in Foil

Any kind of fish that you catch and are willing to eat.. cut into filets (we have used trout, salmon, fluke, flounder and red snapper). Set filets in heavy-duty foil which can be wrapped up. Add tablespoon of butter or olive oil, couple of tablespoons of white wine (optional), juice from half a lemon, seasonings to taste salt, pepper, and others such as dill, or oregano, basil, or herbs de Provence, red pepper, etc.... Wrap completely closed in the foil cook over hot coals or in oven for about 30 minutes. We have also added shrimp and scallops, and have added onions, garlic, & julienne of vegetables, etc.... Relatively simple. Tastes great

From http://www.scoutorama.com/, this looks like the easiest to prepare ahead and feed a crowd.

Five-Can Chili

 • 1 can chili, your favorite
 • 1 can diced tomatoes
 • 1 can corn
 • 1 can kidney beans, drained
 • 1 can any other beans, undrained
 • 1/4 cup BBQ sauce
 • 1 tablespoon chili powder or to taste
 • Tabasco, optional
 • A Large Pot
 • A big spoon
 • Campfire or camp stove
Combine all ingredients; heat and serve.

These are just samples. You will find lots of camping recipes at these places. I hope you all have a wonderful time. Let us know how you made out when you return.

Lucy, I happened to notice that today http://allrecipes.com has posted a very helpful page for camp cookers: http://allrecipes.com/advice/coll/all/articles/54P1.asp?tsrc=wc You might find some more ideas there. (I hope it's not too late...You didn't say when you plan to go camping.)
