Hi Lucy, I found some goodies for you.
Most camping recipe directions tell you how to cook outdoors, but any of these can be prepared ahead of time, frozen and packed.
The following is from http://www.camprecipes.com/
Camp Tuna and Mac
Boil the amount of water indicated on the macaroni box in a pot. Add pasta and cook until tender. Add cheese packet, tuna, and salt and pepper. Stir. You could also add celery or onion, if desired.

Fish in Foil
Any kind of fish that you catch and are willing to eat.. cut into filets (we have used trout, salmon, fluke, flounder and red snapper). Set filets in heavy-duty foil which can be wrapped up. Add tablespoon of butter or olive oil, couple of tablespoons of white wine (optional), juice from half a lemon, seasonings to taste salt, pepper, and others such as dill, or oregano, basil, or herbs de Provence, red pepper, etc.... Wrap completely closed in the foil cook over hot coals or in oven for about 30 minutes. We have also added shrimp and scallops, and have added onions, garlic, & julienne of vegetables, etc.... Relatively simple. Tastes great
From http://www.scoutorama.com/, this looks like the easiest to prepare ahead and feed a crowd.
