loved this recipe so much I thought I would share it with my friends.
It is an eggy, easy-do German Pancake.You can top it with fruit or chocolate sauce or even just a dusting of confectioners' sugar.
I got the description and recipe out of an April 2, 2002 Family Circle.  I thought I had lost it!  It is GREAT and EASY.  It puffs up and you think it is going to be awful....but then it settles down and you see it has made it's own crust like a little custard. It makes a great quick and easy BRUNCH!
Here it is...
 
GERMAN PANCAKE RECIPE
Makes: 8 servings
Prep: 5 minutes.
Bake: at 400* for 20 minutes
 
6 eggs
1 cup milk
1 cup all-purpose flour
1/3 cup sugar
1/2 teaspoon salt
2 tablespoons butter
1 to 2 tablespoons confectioners' sugar, for dusting
 
1. Heat oven to 400*. Whisk together eggs, milk, flour, sugar and salt in a large bowl.
2. Melt butter in oven-proof skillet preferably 10-inch cast-iron pan, over medium heat.  Using a pot holder remove skillet from heat.  Pour egg mixture into hot skillet.
3 Carefully transfer hot skillet to 400* oven and bake for 20 minutes or until pancake is golden and puffed.
4. Sift confectioners' sugar over top of pancake and serve immediately.
 
Nutrient Value Per Serving: 192 calories, 8 g fat (4 g saturated), 7 g protein, 23 g carbohydrate, 8 g fiber, 208 mg sodium, 171 mg cholesterol.

I received this recipe from a cousin of mine in Alabama. I haven't tried it yet, but it sounds good AND easy.
