                 Portuguese Potatoes   
3 lb. small potatoes                 1 tsp.onion powder
2 Tbsp. tomatoe paste                 salt & pepper
2 Tbsp. olive oil                       1 bay leaf
1 tsp. garlic  powder             
 
In a large bowl,mix all ingredients except potatoes.
Add potatoes & coat.
 
Then put all ingredients in a roasting pan.
Mix 2 chicken bouillon cubes with boiling water.
Pour just enough of the chicken bouillon to cover the
bottom of the roasting pan.
Add more water later if it starts to dry in the bottom of pan.
Bake at 450degree F, turning potatoes every 15 minutes.
When almost done, put under broiler untill crisp & tender if you want.

             Cooking a Turnip (microwave)
1 Turnip
Leave whole & pierce it ,then place it on double thickness  of white non-recycled paper towel in the microwave.
 
Microwave (high) for 10 to 12 minutes for small turnip or 12 to 16 minutes for a medium-sized turnip
Turning turnip part way through cooking.
When cooked, wrap in aluminum foil.
Let stand for 15 to 20 minutes.Peel,cut into chuncks & mash.
 
Be carefull the turnip is very hot.

APPLE-CRANBERRY-WALNUT PIE

Ingredients

1  Flaky Pastry (can use ready made type)

1 egg beaten lightly with 1 tablespoon water

¼ cup plain cracker or corn flake crumbs

4 large Granny Smith or Greening apples, peeled and sliced

½ cup dark brown sugar, packed

Juice of ½ lemon

2 ½ tablespoons flour

½ tablespoons ground cinnamon

½ teaspoon ground nutmeg

¾ cup chopped walnuts

1-cup cranberries, fresh or frozen (not defrosted)

2 tablespoons butter cut up

Granulated sugar

Procedure

1. Prepare pastry as follows... 

Roll out 1 portion to 12-inch circle and ease into 10-iinch Pyrex pie plate.(Refrigerate remaining pastry until ready to use.) Brush egg glaze over pastry in pie plate, then sprinkle with crumbs. Set aside.

2. Toss apples along with brown sugar, lemon juice, flour, cinnamon nutmeg, walnuts and cranberries in large bowl. Spoon mixture into crust and dot with butter.

3 Roll out remaining pastry. Cut into 12 (3/4- inch wide) strips. Arrange strips, 6 in each direction, lattice-fashion, over top. Brush egg glaze between ends of lattice strips and bottom crust edge. Fold over edges and crimp. Brush pastry top with glaze, then sprinkle with a little granulated sugar.

4. Set pie on rack in lower third of oven. Bake at 425 degrees 15 minutes. Lower heat to 350 degrees, raise pie to center rack and bake 40 to 45 minutes longer or until golden brown. Check pies crust about halfway through baking time and add foil edging to prevent overbrowning. Cool on wire rack.

 Sweet Potato Casserole

6 cooked sweet potatoes, (about 3 cups)
2 eggs
1/2 cup brown sugar

1/2 cup chopped nuts--Mom always used pecans
3/4 cup packed brown sugar
1/4 cup oil
a little under 1/2 cup flour
1 tsp. vanilla

Generously grease a 2 qt casserole dish/

Peel and mash the sweet potatoes. Mix in the sugar and the eggs . Pout into the greased casserole dish

Put all the other ingredients into a mixing bowl and blend until it forms a crumbly texture.
Sprinkle on top of the sweet potato mixture,

Bake at 350F for about one hour.

                         Beef Stew
2 lb. stewing beef
2 cups V8 juice
1medium onion,sliced
2 cups carrots, chopped
1 can mushroms,drained
4 tbsp.Minit Tapioca
 
Mix all ingredients in an ovenproof container.
Sprinkle with tapioca.
Cover. bake at 250 degree F for 4 hours.

              Lemon Cream Cheese Bars
1---box yellow cake mix
8---ounce pakage cream cheese softened
2---eggs
1/4 cup sugar
2---Tbsp. fresh or bottled lemon juice
1---tsp.lemon zest
1/3 cup oil
 
Preheat oven to 350 degree F/(325 degree for glass pan)
 
Use 9" by 13" pan
 
-Mix dry cake mix,with 1 egg & the 1/3 cup oil until crumbly.
-Reserve 1 cup of the mixture.
-Pat the remainimg lightly in the pan.
-Bake 15 minutes.
-While this is baking beat cream cheese,sugar,lemon  juice & zest & the remaining egg until light & smooth.
-Spread over Baked crumb mixture on top & bake 15 minutes longer.
-DO NOT OVER BAKE
-Will be light golden.
-Chill thouroughly & cut as desired'

I am new here so just found the Lemmon Cheese Bars. For the first time in my life I have to GAIN weight, these sound sooo good I printed it and hope to try it soon. I can hear some of you, I'll give her some of my fat. If I took all the fat offered me I would wrigh 900 pounds.
