Combine in large glass or plastic bowl:
 
10 c chopped cabbage, lightly packed  (abt 6" cabbage)
2 medium grated carrots
1 c chopped green or red peppers (1 small)
1/2 c finely chopped onion
 
Heat to boiling:
 
1 1/2 c sugar
1 tsp dry mustard
1 tsp celery seed
1 1/4 c white vinegar
 
Pour hot syrup over veggies and press veggies down.  Let cool.  Refrigerate overnight, stir once or twice.  Freeze in meal-size containers.  For one person, pudding- or small yogurt cups are ideal.  Then pop the little cakes into a plastic bag.  Yes, the hot syrup will wilt the veggies.  That's the idea.
