World's Best Banana Muffins (she said humbly)
 
Beat to blend:
 
2 c coarsly crushed corn flakes
1/2 c milk
2 c mashed banana- ripe but not black
2 eggs
1/2 c soft butter or shortening
 
Stir together:
 
2 c flour
5 tsp baking powder
1 tsp salt
1/2 c sugar
 
Stir flour mixture into banana mix.  Stir just enough to blend (batter should be lumpy). Spoon into well greased muffin cups.  Bake at 400f about 20 min til tops are springy to the touch.  = 24 medium

Oatmeal Pancakes
 
Combine and let stand 5 minutes:
 
2 c milk
1 1/2 c quick cooking oats (uncooked)
 
Add to this:
 
2 eggs beaten
1/3 c veg oil
 
Stir together:
 
1 c flour
2 tbsp sugar
2 1/2 tsp baking powder
1 tsp salt
 
Stir flour mixture into liquids.  Bake on hot griddle til golden, turning only once.  Makes about 14 pancakes.

Add-a-Crunch   --  This delightful topping is great served over puddings, ice cream, fruit (fresh or cooked), yogurt, or just about anything.  It stores almost forever, so keep some handy.
 
1 1/4 c quick cooking oats
1/3 c firmly packed brown sugar
1/3 c butter or margarine, melted
1/3 c chopped nuts
1/4 tsp cinnamon (optional)
 
Mix the whole thing well.  Cook gently in non-stick skillet over medium heat, stirring constantly, until light golden brown--abt 5 minutes.  Makes about 2 cups.

Spinich Salad
 
1 bag baby spinich from produce section
1 forth to 1 third lb. blue cheese
1 cup toasted walnuts
Dressing
! fourth cup maple or good pancake syrup
1 and a half tbls, cider vinigar
2 tbls. olive oil
In small sauce pan warm all dressing ingredients just to a boil .Remove from heat and pour over spinich nuts and crumbled blue cheese.
 If youlove blue cheese, you will love this contrast I did!
