Does anyone have a good recipe for eggplant? I had it at a restaurant once, and you couldn't tell if it was eggplant or veal! Love eggplant sandwiches too.

Eggplant sandwich?  LOL. Never heard of it. I rarely eat eggplant and
have not made it at home but I don't ever remember it tasting like veal.
Eggplant parmigiana is fairly good but it's not usually one of my choices
from the menu.  Zucchini seems to taken a front seat over eggplant.
If I could find a good eggplant recipe, will post it here.
