A friend on another board posted these, and I thought they were worth sharing.
Sunday: Put 1 6lb bag of PLAIN frozen chicken breasts in crockpot. Cook. Put in bowl and shred using two forks, or whatever works for you. Should cool a little while shredding. Seperate into 5 quart sized baggies. Throw in fridge.

- Chicken Salad
- BBQ Pulled Chicken
- Chicken Nachos
- Teriyaki Chicken
- Chicken Pillows
Monday: Chicken Enchaladas
1 bag shredded chicken
1 can rotel (any variety)
1 can cream of chicken soup
1 cup shredded cheese
Mix all together
Roll into flour tortillas, place in casserole dish and bake for 20min at 350. Serve with sourcream and melted cheese on top.
Tuesday: Chicken Salad
1 bag shredded chicken
Mayo
Green onions
shredded cheese
sliced grapes
cubed or grated apple
sliced nuts
Mix above together. Spread on Bread, pitas, etc. Serve with salad or on salad too!
Wed: BBQ pulled chicken
1 bottle favorite BBQ sauce
1 finely diced onion
1 bag shredded chicken
Toss onion in saucepan, heat through, add chicken and BBQ sauce. Mix well and heat up. Put on Hamburger buns. Serve with baked beans.
Thursday: Chicken Nachos
1 bag shredded chicken
Chicken fajita seasoning (chili powder, garlic, salt, pepper)
1tbs vegetable oil
Tortilla chips
1 can black beans or refried beans
shredded cheese
salsa
sour cream
Heat oil in pan, add chicken and seasoning. Toss around until warm. Heat up rinsed black beans or refriend beans. Allow everyone to make their own nachos.
Friday: Teriyaki Chicken
1 bag shredded chicken
1/4-1/2 cup teriyaki sauce
Rice
Frozen bag of vegetables, we use CA Blend
Make rice according to directions. Heat shredded chicken in pan, add teriyaki sauce and simmer. Throw a few cups of frozen veggies in dish, 3tbs teriyaki sauce and 2tbs water, cover and steam in microwave (or on stove if you wish). Dish out rice, put chicken and vegie's on top. Sprinkle with soy sauce if desired.
Alternate receipe:
Chicken pillows
2 tubes croissants
1 bag shredded chicken
green onions, sliced
1 block cream cheese, room temp
Mix chicken, cream cheese and green onions (or leave them out). Roll out croissant and fill with mixture. Cook in oven according to croissant directions. Serve with ramen, tomato soup, etc.
Can you tell we eat a lot of chicken? Seriously though. The above will feed a family of 4-6, depending on appetites, each night for 1 week. With ALL the ingredients it runs about $20
