I've got another easy recipe to add! My DH limits his wheat intake, so I like to serve things with rice or beans to make them hearty. This one is a new favorite! Brown a pound of ground beef. Add 2 cans of sloppy joe sauce Add 2 cans of drained kidney beans Serve Amazingly, Andrew was wild about this, and has been begging me to cook it again. Easier than chili, healthier (more fiber) than sloppy joes. |

Take one DD, make her chop the chicken and fry the chicken. Open a bottle of butter chicken sauce (me - she has dainty, girly hands). Pour over chicken, have her stir it over 15 minutes. Me - rice in rice cooker and turn on. Take one DS and have him make salad. (He got hungry tonight so got out in the kitchen made up a salad, we had bought bbq chicken to go with it). |

For a slight mexican twist on your recipe, Dia, make it with pinto beans, fresh made salsa, a little chili powder and some cheese along with the ground beef (or chicken). Put it in all in a casserole dish after cooking the ground meat, with the cheese on top...I have made this in the past and it is a fave. You can also use the whole mix on top of a bed of lettuce, add some baked tortillas for a yummy taco salad. |

Southern Fried Shake & Bake chicken with coleslaw. I buy the bagged (no dressing) coleslaw. Throw a tad of white vinegar on it,then mix mayo & ranch dressing together for dressing. And if in stock, I add dried cranberries or sliced apple to the mix. Everyone LOVES this in my household. |

If you are in a real bind for time but want soup...and don't just want to open a can of Campbells.... ground beef - browned (I buy in bulk and brown mine ahead of time) A bag of frozen mixed veggies (or a few cans-drain and dump) whatever you like Some beef broth - amount depends on if you want it thick or thin Seasoning to taste (bay leaf, onion, parsley...whatever you like) Options: add tomato sauce or spag sauce and a can or two of drained kidney beans for minestrone, add some pasta at the end (about 15 mins) |

Hey, just noticed something, Cheryl you mentioned having 2 children helping you make dinner????? I am moving to Australia. lol. We LOVE Mexican food, Tostados are our fav, but do take time & effort. So some nights we just do are quesidillias. - Turn on oven broiler
- Spread salsa on 1/2 on tortillia
- sprinkle grated cheese on top
- fold tortillia in half & place on baking sheet & directly under broiler, for 2-3 min each side.
When I have more time & stock, I do add more ingredients; - green onions
- tomatoes
- cooked ground beef or cooked chicken
- refried beans

Lately it's: 2 pounds ground beef 3 cans Ranch Style beans 1 packet chili seasoning Dump in crockpot and cook on high for 3-4 hours. Spoon into bowl and sprinkle with shredded cheese. Top with Fritos if you enjoy Frito Pie, otherwise, eat as is. AND 1 can black beans 1 can corn 1 can sweet peas 1 can Progresso Light Vegetable Soup Dump all ingredients into a pot and heat to a low boil. If I have some chicken already cooked, I'll add that, and it's very tasty. Low calorie, too. I use Ranch brand black beans and Green Giant corn and sweet peas. Without the chicken, one cup has 137 calories. 3 oz. of boneless, skinless grilled chicken is under 100 calories. |
