I know it's not summer over there but I had to share this.
Lemon Cordial

Make sugar syrup by heating equal amounts of sugar and water (eg 1 cup sugar to 1 cup water) in a saucepan until sugar is dissolved. Allow to cool.
Juice lemons and strain pips out. Mix equal amounts of sugar syrup and lemon juice together, bottle and chill. Keeps in the fridge for about a month.
To use, mix 1 part cordial to about 5 parts chilled water (more or less to taste) in a jug or glass.
I made this last night, 5 lemons gave me just over a cup of juice, the leftover syrup is in a jar in the fridge for the next time I make it. Which will be very soon because there is no way that it's going to last a month in my fridge. I love the fact that the juice hasn't had the goodness and vitamins boiled out of it and that there are no preservatives or ingredients I can't pronounce in it. There does seem to be a lot of sugar but it's not overdone in sweetness. This is my new favourite drink.
