Here is one shared just awhile ago by a friend of mine on another list. I have yet to try it, but sounds good!
Crockpot Chicken with Black beans and cream cheese
4-5 boneless chicken breasts cut up (FROZEN)
1 can black beans
1 can corn
1 jar salsa, any kind
1 package cream cheese, cubed
Add chicken, black beans (drained), salsa, and corn (drained) to crockpot. If you don't use frozen chicken, add an additional 1/4 cup of water. Keep in crockpot on high for about four to five hours or until chicken is cooked. Add cubed cream cheese (just throw it on top) and let sit for about 1/2 hour. Stir before serving.
This is a great recipe that you can do a lot with. You can eat it as is, or you can pour it over rice or fritos. You can also, take a small amount of it and fill flour tortillas with it, cover with cheddar cheese and bake until the cheese is melted.
