10 minute prep dinner

 I had to make dinner quick tonight as we ate very late.  This is what I did:  note to me:  write in my book:
 
Took 5 big pork-chops (maybe 3/4 inch thick) put on cookie sheet, sprinkled with garlic powder, salt and pepper on both sides.
 
Took 5 mediium potatoes with skin on, cut in half lengthwise (I used these awesome "Klondyke Rose" gourmet potatoes that I got on sale).  Put cut side in shallow casserole.  Poured some good oil on (I used sunflower), rubbed oil all over potatoes, sprinkled with salt and pepper.  Put both taters and chops in 350 convection oven (375 regular).  One underneath the other.  (Switched them half way through cooking time.) Roasted for about 45 mins for chops and about 50 mins for taters.  I did not overcook the chops for once.
 
It was a really good dinner and really took 10 mins to get ready.  Of course some veggies would have been good but I have a cold and did not have the energy tonight

I have to do this again! I did the mushroom soup ones the other night and it was so good! Browned 6 chops, cut up onion, cut up celery, 2 cans of cheap cream of mushroom soup, paprika, Italian herbs, pepper 350 for an hour and half or two hours.  (In casserole with lid). With mashed potatoes which don't take 10 minutes but if you had leftover rice...  And the chops don't really have to be browned I don't think.
 
I want to do frozen chicken breasts with tomato sauce and melted parma and mozza cheese over it in the oven. Maybe put the cheese at the end. Sort of like chicken parma but not breaded.  Would that work out?
