Potatoe Soup

This is a recipe my neighbor that I clean house for gave me this a.m., I am gonna fix it for supper, only I'm adding cheese to mine.. it's similar to O'Charley's loaded potatoe soup recipe that I found online(not sure that it's the exact recipe), haven't tried it yet as it calls for 8 cups of 1/2 and 1/2, need to go somewhere like Alid's so I can get it cheaper.. anyhoooo, this one doesn't call for as much, so gonna try it for supper, will let you know how it turns out.. have a good one~ gina

 

JOEY'S POTATO SOUP~

8 sliceds bacon crumbled

1 cup chopped onion

4 cups potatoes cubed

1 can cream of chicken soup

4 oz. sour cream

2 T. Parsley

1 cup H20

1 cup milk

3/4 cup 1/2 & 1/2

1/2 tsp. salt

1/2 tsp. pepper

 

Fry bacon & drain... Fry onions in bacon drippings & drain..  Combine onions & potatoes in water in pot & cover & simmer 15 min. or til tender.  Stir in soup, sour cream & bacon.  Last add 1/2 & 1/2, milk, parsley, salt & pepper.. Simmer til hot, (DO NOT BOIL)
