SUGAR FREE PINEAPPLE PIE.... no, it won't look like the picture up there....lol.....
1 cup crushed graham cracker crumbs
1/4 cup margarine, melted
1 package (1 ounce) sugar free instant vanilla pudding mix
1 cup (8 ounces) fat-free sour cream
1 can (20 ounces) crushed pineapple (in natural juices), drained
1 packet aritficial sweetener
Combine crumbs and margarine; press into bottom and up the sides of a 9 inch pie plate. Bake at 350 degrees for 8 to 10 minutes; cool.
In a bowl, combine pudding mix and sour cream; mix well. Stir in pineapple and sweetener. Spread into crust. Chill at least 3 hours.
Ladies, My husband hardly ever gives out high praise for any food. But he sure gave it for this pie that the mother of one of his co workers made. My husband is type II diabetic, and has been trying to cut back on sweets.... and is doing a great job by the way. I haven't had a chance to make it myself, but when I do I will definitely share my opinions about it too. If he's lucky I won't like it...lol But I love pineapple...... so he may not be that lucky.
