Chicken Cordon Bleu
 
4 boneless skinless chicken breasts or thighs
4 slices of thinly sliced ham
4 slices of either swiss or provolone cheese
milk
bread crumbs
 
Prepare a small cookie sheet by covering with foil and spraying with non-stick spray.
 
Pound the chicken pieces until fairly thin and uniform thickness.  Soak pieces in milk for 15 - 30 minutes.  Lay each chicken piece on a flat surface and  top with one slice of ham and one of cheese  -  not all the way to the edge.  Roll up with chicken on the outside and hold with toothpicks.  
 
In a flat bowl, put your favorite bread crumbs - freshly made, dried and seasoned, panko, whatever.  Roll the chicken rolls in the bread crumbs and put onto prepared pan and bake at 350 degrees for about 45 minutes.  They were really good!
