Artichoke Pate
15 ounces artichoke hearts, drained 4 ounces cream cheese, softened 1/4 cup parmesan cheese 2 tablespoons lemon juice 1 cloves garlic, finely chopped salt and pepper, to taste 1 dash cayenne 2 tablespoons fresh parsley, chopped 2 tablespoons fresh chives, chopped 2 tablespoons black olive, chopped 2 tablespoons red bell pepper, minced
1. Combine the artichokes, cream cheese, Parmesan, lemon juice, garlic, salt, pepper, and optional cayenne in an electric food processor and process until smooth. 2.Stir in the parsley, chives, olives, pimiento, and spoon into a serving bowl. Chill for at least 2 hours before serving. Serve with raw vegetables, crackers, pita bread, or melba toast.
