Grilled bourbon shrimp skewers

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons bourbon 3 tablespoons honey 1 tablespoon soy sauce 2 tablespoons Creole mustard 3 tablespoons minced onion 1/2 teaspoon black pepper -- (freshly ground) 2 pounds de-veined -- peeled shrimp
Soak 6 to 8 wooden skewers in water for 1 hour.
Combine bourbon, honey, soy sauce, mustard, onion and pepper in a bowl; mix well. Add shrimp; mix well. Cover, and refrigerate 1 or 2 hours, stirring every 15 to 20 minutes.
Spray the grill with nonstick cooking spray. Let it stand for 5 minutes. Heat grill on medium for 10 minutes. Drain the shrimp, reserving marinade. Thread the shrimp onto skewers.
Grill shrimp 3 to 4 minutes on each side or until pink and opaque, basting occasionally with reserved marinade.
