INGREDIENTS - Secret Ingredient Barbecue Sauce
- 4 chicken legs, split into drumsticks and thighs (2 1/2 pounds)
- 1 tablespoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
DIRECTIONS - 1. Make Secret Ingredient Barbecue Sauce; set aside
- 2. Preheat broiler or preheat grill. If using broiler, line baking pan with foil.
- 3. Sprinkle chicken with paprika, salt and pepper. Place chicken on broiler rack and brush one-fourth of barbecue sauce over it. Broil 8 inches from heat 4 minutes. Brush with one-third of remaining sauce and broil 4 minutes. Turn, brush with half of remaining sauce, and broil 4 minutes. Brush with remaining sauce and broil 5 to 8 minutes, or until cooked through. Or grill chicken over medium heat for 20 minutes.
- Secret Ingredient Barbecue sauce: In 10-inch skillet, heat 2 teaspoons olive oil over medium heat. Add 1 minced small onion and 2 minced garlic cloves and cook, stirring frequently, about 7 minutes, or until tender. Add 2/3 cup ketchup, 1/4 cup firmly packed brown sugar, 1/3 cup brewed coffe, 2 tablespoons molasses, 1 tablespoon red wine vinegar, 1 tablespoon ground ginger, and 1/4 teaspoon salt. Bring to a boil. Reduce to a simmer, cover and cook 5 minutes, or until thick. Store covered in refrigerator.
