Pinto Beans This recipe has been in my family for many years. Pick out all bad beans and rocks. Wash beans. Put in a large pot. Cover with cold water. Add a chunk of salt pork, salt, black pepper, 1/2 chopped onion, 1/2 chopped bell pepper, 4 chopped garlic cloves, 1 tsp oregano, red pepper flakes to taste, seasoning salt. cook over low heat until tender and juice is thick. You will need to add water as needed to keep beans from drying out.Takes about 4 hours to cook or until tender. Toward end of cooking cook until juice is thick and beans are tender.No stirring is necessary. Stirring makes them mushy and they will stick to the pot |
