Lamb or beef patties with tahini sauce
ingredients
Makes 6 patties
- 500g lean lamb or beef mince
- ¼ cup bulghur wheat or couscous
- 1 tsp minced garlic
- 1-2 tsp dried oregano
- 2 tbsp chopped parsley
- 1 tsp each ground cumin, coriander
- About ½ cup tomato juice
- 1/3 cup pine nuts
- 1 small onion, finely chopped
Tahini Sauce
- 4 tbsp tahini (sesame paste)
- 1 tsp minced garlic
- 2 tbsp lemon juice
- About 1/3 cup water
- Chopped parsley
method
Combine the mince with the remainder of the patty ingredients and mix well.
Put quarter of a cup of boiling water over the bulghur or couscous and stand for 10 minutes.
Mix the mince with the garlic, onion, herbs, spices and tomato juice, bulghur or couscous and beat well. With wet hands shape 6 flat patties.
Cook the patties for 5 minutes each side over a moderate heat on the BBQ or in a frying pan.
Tahini Sauce
Warm together the tahini, garlic, lemon juice and water, stirring until smooth. Stir in the parsley.
Serve patties with sauce, pinenuts, fresh bread and a salad.
