FRUIT SNACK MIX
12 cups popped popcorn (about 1/2 cup unpopped)
1 cup chopped macadamia nuts
1 seven oz. package tropical mixed dried fruit bits
1/2 cup dried cranberries
1/2 cup butter
1 cup raw or granulated sugar
1 tsp. finely shredded lime peel
1 tups. finely shredded orange peel
1/2 tsp. ground ginger
1. Preheat oven to 300 F. Remove all unpopped kernels from popped popcorn. In a large roasting pan, combine the popcorn, nuts, fruit bits, and carnberries; set aside.
2. In a small sauce pan combine butter, sugar, lime peel, and ginger. Cook and stir over medium heat until butter and mixture is nearly smooth (the sugar will not completely dissolve) Pour mixture over popcorn mixture; stir gently to coat.
3. Bake for 45 minutes, stirring every 15 minutes. Remove from oven. Spread mixture on a large piece of foil to cool. Store in an airtight container up to 1 week. Makes about fifteen one cup servings.
