INGREDIENTS - Filling:
- 1/4 cup sugar
- 1 tablespoon flour
- 2 teaspoons grated lemon or orange zest
- 1/8 teaspoon salt
- 3/4 pound red plums, cut into1/4-inch thick wedges
- 2 medium Golden Delicious apples, peeled and cut into 1/4-inch chunks
- 1 pint blueberries
- Cobbler Topping:
- 1 1/2 cups flour
- 2 tablespoons sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 4 tablespoons cold unsalted butter, cut up
- 1/3 to 1/2 cup heavy or whipping cream
DIRECTIONS - 1. Preheat oven to 400 F.
- 2. Prepare filling: In a small bowl,combine sugar, flour, lemon zest and salt. In large bowl, toss fruit with sugar mixture. Transfer to 7 x 11-inch glass baking dish.
- 3. Make Cobbler Topping: In large bowl, stir together flour, sugar, baking poder, and salt until well combined. With pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Make well in center of dry ingredients and stir in enough cream just to moisten mixture (start with 1/3 cup and add 2 or 3 more tablespoons if necessary to moisten dough). Transfer to lightly floured surface and knead dough 3 or 4 times, or just until it comes together.
- 4. With lightly floured hands, pat dough out 1/2 inch thick. With 2 1/2 inch round biscuit cutter or floured water glass, cut rounds and arrange them on fruit. Reroll scraps if necessary to get 8 rounds. Bake 20 to 25 minutes, or until biscuits are golden brown and fruit is piping hot and tender. Serve warm or at room temperature
