Sweet Potato Biscuits

1 lb. sweet potatoes (boiled)
1 cup light brown sugar
1/4 cup water
2 1/4 cups Bisquick

Cool and peel potatoes. Mix all together, mixture will be moister than regular biscuits. Flour table, roll dough to 1/2 inch thickness. Cut with a 2 1/2 inch cutter. Place on greased sheet pan.

Bake in preheated oven at 350 for 16-18 minutes. (The moist mixture does not allow the biscuits to rise a great deal.) Do not overcook.

Yields 1 1/2 dozen

Sweet Potato Biscuits

2 cups of self rising flour
1/2 teaspoon of baking soda
1 teaspoon of cinnamon
1 stick of butter, melted
1 cup of cooked, sweet potatoes, mashed
1/3 cup of orange juice
1/2 cup of milk
1 egg, beaten
1 cup of chopped dates
1/2 cup of chopped nuts

Set your oven to 375ºF. In a large bowl, combine the margarine, sweet potatoes, milk, orange juice and egg. Mix well. Sift the dry ingredients together and stir them into the sweet potato mixture. Fold in the dates and nuts, mix well. Bake in a greased 8 x 8 inch pan for 30 to 40 minutes. Serves 7

Sweet Potato Biscuits 2

1/2 cup of melted butter
1 cup of cooked mashed sweet potatoes
2/3 cup of milk, at room temperature
2 cups of all purpose flour, sifted
2 tablespoons of brown sugar
1 teaspoon of salt
4 teaspoons of baking powder

Preheat your oven to 400ºF. Beat your melted butter into the mashed potatoes. You may season them also at this time. Stir in the milk. Sift together the flour, sugar, slat and baking powder. Slowly stir in the remainder of the dry ingredients into the sweet potato mixture. Once a nice ball forms, turn out your dough onto a well floured board. Use a considerable amount of flour on your hands for patting as the mixture is a bit sticky. Pat it out 1/2 inch thick and cut into circles with a 2 inch cookie cutter or the rim of a floured glass. Place the biscuits with sides touching in two greased 8 inch round pans and bake for 20 minutes or until golden brown.

Sweet Potato Biscuits

3/4 cup buttermilk
1/4 cup cooking oil
1 cup mashed boiled sweet potatoes.
2 Tbsp. sugar
Mix flour , buttermilk and oil. In a separate bowl, mix sweet
potatoes and sugar.
Mix this into the floue mixture.Knead until mixed well and
smooth.Roll out on floured surface and cut to about 1/2 "
