FLUFFY BISCUITS
(Yield: 10 biscuits)
2 cups self-rising flour
1 teaspoon sugar
2 tablespoons shortening
3 tablespoons butter or margarine
1 cup buttermilk
Preheat oven to 450°F. Spray a baking sheet with non-stick
vegetable spray.
In a large mixing bowl, combine flour and sugar; cut in
shortening and butter until mixture resembles coarse crumbs. Stir
in buttermilk until a dough forms. On a lightly floured surface,
gently knead the dough 3 times. Roll to 1/2-inch thickness; cut
into 2-1/2 inch rounds. Place biscuits on prepared baking sheet.
Bake 12 to 15 minutes or until golden brown.
