Cottage Cheese Dill Bread
1 pkg. active dry yeast (dissolved in
1/4 cup warm water)
1 cup cottage cheese, heated to lukewarm
1 tbsp. butter
2 tbsp. sugar
1 tsp. salt
1 egg, unbeaten
1 tbsp. instant minced onion
2 tsp. dill seed
1/4 tsp. soda
2 1/4 - 2 1/2 cup flour
Combine in bowl, cottage cheese, butter, sugar, salt, egg, onion, dill seed, soda and softened yeast. Stir until blended. Add flour to form stiff dough, beating well after each addition. Cover and let rise until dough is double in size, about 50-60 minutes. Stir down dough. Turn into well greased bread pan or form into rolls. Let rise in warm place until light, about 30-40 minutes. Bake in moderate oven of 350 degrees 30 minutes for rolls, 40-50 minutes for loaf. While still hot brush with softened butter and sprinkle with salt
