Date Nut Loaf
3 cups sifted flour 3 tsp. double-acting baking powder 1/4 tsp. soda 1 1/2 tsp. salt 1/2 cup granulated sugar 1/4 cup firmly packed brown sugar 1 egg, well beaten 1 1/4 cups milk 1/4 cup shortening, melted 1/2 cup cup finely chopped nuts 1 cup finely cut dates
Measure sifted flour, add baking powder, soda, salt, and granulated sugar, and sift again. Add brown sugar mixture, add shortening, then mix only enough to dampen flour. Fold in nuts and dates.
Pour batter into 9x5x3-inch loaf pan or into two 8x4x3-inch loaf pans, lined on bottoms with paper. Bake in moderate oven (350 degrees) for 1 hour and 5 minutes for large loaf, or about 50 minutes for small loaves. Cool. Wrap in waxed paper and store overnight before slicing.
For one small loaf, use half of all ingredients in above recipe, using 2/3 cup milk. Bake in one 8x4x3-inch loaf pan, lined on bottom with paper, in moderate oven (350 degrees) for 50 minutes.
