1/4 cup pizza toppings (pepperoni, mushrooms, etc...)
Procedure
In a bowl beat together the eggs, the water, the Italian seasoning, and salt and pepper to taste. Heat the oil in an 8-inch nonstick skillet over medium-high heat. Add the egg mixture. As the egg begins to set, use a spatula to gently lift the edges to allow the uncooked egg to flow onto the skillet. When the egg is almost set on the surface, spread the pizza sauce over the top. Sprinkle with the cheese, and add the toppings. Place the lid on the skillet and cook for 1 to 2 minutes to melt the cheese. Slide the omelette onto a serving plate.
