In a large bowl, stir together the buttermilk, the eggs, the honey, and the oil until well blended. In a separate bowl,mix together the flour, the wheat germ, the baking soda, and the salt. Stir the buttermilk mixture into the flour mixture just until moistened. Do not overmix. Fold in the apples. Preheat a griddle to medium-hot, and lightly brush with butter. Pour a small ladleful of batter for each pancake, and cook until golden brown on the bottom with bubbles beginning to break on top. Flip over and cook until golden brown. Serve with the additional butter and the maple syrup.
