In a medium bowl, toss together the granola, the flour, and the baking soda. Stir in the banana and the vanilla, mixingwell. Add the yogurt and mix well. In the bowl of an electric mixer beat the egg whites until soft peaks form. Beat one-third of the egg whites into the batter. Using a rubber spatula, fold in the remaining egg whites and the oil until just incorporated. Heat a large skillet over medium heat. Ladle a few 1/4-cup scoops of the batter into the hot skillet, spreading the batter into 4-inch circles. Cook until bubbles appear on the surface, about 1 minute. Flip and cook until the bottoms are well browned, about 1 minute more. Repeat with the remaining batter. Serve hot with the maple syrup.
