1 c. quick cooking grits
1 t. salt
1 1/2 c. shredded american cheese
1/2 c. butter or margarine
In a saucepan bring 4 cups water to a boil. Slowly add grits and salt, stirring constantly. Cook and stir till boiling. Reduce heat cook and stir 5 to 6 minutes or till all water is absorbed and mixture is thick. Stir in cheese and butter till melted. Gradually stir about one cup of the hot mixture into 2 beaten eggs, return to saucepan. Turn into a greased 8x8x2 inch baking dish. Bake uncovered in a 325 degree oven for 35 minutes or till nearly set. Let stand 10 minutes before serving.
