Granny’s Old-Fashioned Apple Stack Cake
Ingredients for the cakes:
2 c sugar 1 c shortening (Granny Used Lard) 2 eggs 1 ts baking soda 3 ts baking powder 6 c plain sifted flour 1 ts salt 1/2 c buttermilk 1 ts vanilla
ingredients for the filling:
16 oz can of apple sauce (My granny made her own with Macintosh apples) 1 c brown sugar 1/2 c sugar 2 ts ground cinnamon 1/2 ts ground cloves 1/2 ts ground allspice
Directions:
Cream sugar and butter. Add eggs, one at a time, beating well after each addition. Combine dry ingredients and add alternately to batter with buttermilk and vanilla; mix. Batter will be stiff enuff to treat like cookie dough, so what I do is make a ball then Divide it into equal portion sized balls. Pat batter into six greased 9-inch pans * Note I find rolling each one out like a pie crust works better for me. (Granny made 8 layer’s and I have made as many as 10). Bake in a 450 degree oven for 10-15 minutes. Cool.
FILLING: In a Mixing Bowl add all ingredients above; mix. Spread each of the layers except the top one with apple filling. Stack layers. Let cake stand for 12 hours or over night before cutting (Granny made her’s 3 day’s before our dinner and kept it out in the smoke house). Serves 12-14.
