The Genuine Margarita Besides being the best-known of all tequila drinks, the margarita is also one of the most-often mangled. Here's why: Nearly all tavern-crafted renditions are made with store-bought margarita mix, which is excessively sweet and syrupy. Even those that are made from scratch usually employ the standard Triple Sec, an orange liqueur that lends a very unpleasant metallic taste to the drink; it's vastly better to use a high-quality orange liqueur such as Cointreau or Grand Marnier. If you find this concoction too tart, add a little simple syrup (made by boiling together equal parts sugar and water). Some folks use lemon juice instead of lime juice; others make their margaritas in a blender. These practices are not part of making margaritas, for my money. They might be tasty, but they are not margaritas

Margaritas Ingredients 1/2 cup fresh lime juice coarse salt 1 cup plus2 tablespoons tequila 1/3 cup Cointreau 1/4 cup superfine sugar 2 cups cracked ice Procedure Before squeezing the limes for juice, twirl the rims of 8 cocktail glasses on a cut lime surface, then dip the rims of the glasses in salt. Refrigerate the glasses for at least 1 hour. In a blender combine the lime juice, the tequila, the Cointreau, the sugar, and the ice, cover, and blend at high speed for 30 seconds. Pour the margaritas into the chilled glasses. Serving Information |
