As good as Mama made
 
Basic Meat Loaf 
 
Preparation Time: 15 minutes
Cooking Time: 1 hour
Serves: 6
Ingredients
 
1-1/2 lbs. lean ground beef
1 cup ketchup
3/4 cup quick or old fashioned oatmeal, uncooked
1/2 cup onion or green bell pepper, chopped
½ cup celery, chopped
1 egg

Instructions
 
Preheat oven to temperature 350°F. Combine all ingredients and salt and pepper to taste in a bowl. Mix well. Shape to form an 8x4 inch loaf. Bake in a large shallow baking pan ( I use a bread loaf pan.) about 1 hour.
 
 
After a half hour of cooking I add about a 1/8" of Ketchup to the top and continue to cook.

Try the same recipe with 80% ground beef instead of the lean. You'll be amazed at the additional flavor.
 
Also, cook it only until it's just done. and let it rest for 20 minutes.

DC you can use any beef you like I just listed the one I use, actually the original recipe called for ground pork.
 
Puke I assume you mean dill pickles, I will try that, it sounds good.
