A light fruity curry sauce
 Ingredients
  
2 tbsp canola oil 
 6 oz. low fat coconut milk 
 6 oz. vegetable broth 
 Generous helping curry powder or paste 
 1 Onion, sliced 
 1 Apple, sliced 
 1 Mango, sliced 
 1 Banana, sliced
 In a large saucepan, sweat the onions. Add all remaining ingredients. stir over low heat until well blended and fruit has softened.
