Egg-Sausage Muffins


1 clove Garlic -- minced
1/2 cup Onion, yellow -- chopped
6 ounces Sausage
9 large Eggs
1/3 cup Milk
1/2 cup Sour cream
1/2 cup Cheese -- shredded


Preheat oven to 350 degrees.

Spray Texas-Sized muffin tins with baking spray of some sort.

Cook the garlic, onion and sausage together until the sausage is done. Drain on paper towels.

Mix the eggs, milk and sour cream together until very well mixed.

Divide the sausage mixture and place in the bottom of the muffin tin.

Divide the shredded cheese abd place a bit on top of the sausage mixture.

Pour egg mixture in each muffin tin until about 3/4 full.

Bake in preheated oven for about 30 minutes, or until egg is done. Let cool for a couple of minutes and then remove them all from the muffin tins.

NOTES : These can easily be frozen and then microwaved for a quick breakfast when you are in a hurry.
