1 thin crust pizza dough rolled to 10" x 13" 1 tablespoon of roasted garlic spread 1.75 oz cremini mushrooms 1/4 cup sliced and stemmed shiitake mushrooms 2 pieces basil 1/3 cup fontina or other mild soft white grated cheese 1 oz dry buffalo mozzarella cut into 1/4" cubes 1 tablespoon grapefruit olive oil
Directions:
Preheat oven to 350 degrees. Roll out the dough and brush with garlic spread. Move dough to stone pizza baking pan. Spread out cremini mushrooms starting from outside of dough, followed by shiitake mushrooms. Tear basil into dime size pieces and distribute evenly across dough. Top with grated fontina, starting from the outside edge of dough. Distribute mozzarella pieces evenly across the dough. Bake for 5 minutes. Set oven to Broil and bake for 2 more minutes or until cheese and crust is golden brown. Remove from oven and drizzle with grapefruit oil. Cut and serve immediately.
