Okay guys, this is my own creation (as far as I know!) and I just made it a couple of weeks ago. As far as exact measurements, it depends on the size of the casserole dish you are using. I just chop enough vegetables for each layer.
 
  • fresh broccoli (I used a whole head)
  • approximately 1 cup of onions with 2 cloves of garlic & fresh oregano, mix together
  • approximately 1 cup of carrots (use potato peeler)
  • approximately 1 1/2 cups of sliced mushrooms
  • 1 pkg. of mozzarella cheese (slices)
  • seasoned bread crumbs
  • 2 jars of Prego Chunky Garden pasta sauce
  • basil (either fresh or dried)
  • ground pepper
  • 1/4 tsp. sugar
  • approximately 12 lasagna noodles
  1. slice approximately 1 cup of carrots using a potato peeler
  2. slice approximately 1 1/2 cups of fresh mushrooms
  3. dice approximately 1 cup of fresh onions and then dice about 2 cloves of garlic and add fresh oregano. Mix together.
  4. cut the tips off the broccoli and steam some of them start turning light brown.
  5. boil your lasagna noodles. Drain and then run cold water over them.
  6. mix 1 tsp. of white sugar in each jar of Prego pasta sauce for extra flavoring. Stir.
  7. Arrange the lasagna layers in the casserole dish; pasta, sauce, mozzarella and then top with the carrots and the mushrooms. Repeat - next layer top with your onion mix and add fresh pepper and basil. Repeat and add your noodles, sauce and cheese again ~ last layer top with your broccoli and pour seasoned bread crumbs over the broccoli.
  8. Bake at 350 degrees for approximately 45 minutes
