Curry-Rice Salad
- 1/3 cup mayo
- 1/3 cup plain yogurt
- 1 clove garlic, minced
- 2 t. lemon juice
- 1 1/2 t. curry powder
- 1/2 t. cumin
- 1/2 - 1 t. chopped jalapeno
- 1 t. salt
Mix the above ingredients and stir into: 4 cups hot cooked rice
cool, then add
- dried apricots
- diced apple
- chopped celery
- peanuts
- coconut
- green onion
- cilantro
