I can eat a box of cereal in one sitting and my GF goes nuts. (I make her buy the groceries) Anyway, decided to make my own. I love granola but it's pricey to buy at the rate I consume it. Try this:

1 box (6 cups) rolled oats
3/4 cup chopped nuts (I use walnuts)
1 cup coconut
3/4 cup wheat germ
1/2 teaspoon cinnamon
1/4 teaspoon salt
2/3 cup honey
1/3 cup maple syrup
1/3 cup oil, any kind
1 teaspoon vanilla (imitation OK)
1 cup dried fruit, optional

Preheat the oven to 300 degrees. Combine the first 6 ingredients. Warm the honey, add the oil and vanilla. Drizzle the honey-oil over the dry ingredients and toss to coat. Spread the mixture onto 2 cookie sheets. (I use 2 cake pans about 10X16. Cookie sheets would be all over the oven when you stir it.) Bake about 30 minutes until golden, stirring every 10 minutes.
When done, remove from oven and stir in dried fruit if used. As the granola cools, it will lose its stickiness and become crunchy. Makes about 10 cups. (lasts me about 3 days )

BTW, I added the coconut to the recipe so I don't use any other fruit. And, sunflower seeds will provide the same crunch if yah don't wanna use nuts.
