Ingredients:
 
1 flour tortilla
butter
cinnamon
sugar
 
Cover a flour tortilla with butter or margarine. Sprinkle cinnamon and sugar on top (cover the tortilla) and then bake at 425 degrees until the tortilla is browning on the sides. This is a great snack...
 

Cheesecrisp
 (for those of you back east)
 
Ingredients:
 
1 flour tortilla
green chiles (optional)
cheddar cheese (grated)
butter
 
Cover your flour tortilla with butter and bake at 425 for about 5 minutes. Remove from oven and then cover with grated cheddar cheese and green chiles on top (optional). Bake at 425 until cheese starts to "bubble" and edges are brown and crispy.
 

 
Broiled Tomatoes
 
Ingredients:
 
1 tomato (makes 2 - half size servings)
garlic salt
pepper
basil (fresh is better)
butter (optional)
mozarella cheese
 
Slice a tomato in half. Put a small amount of butter on each half and then sprinkle with garlic salt, pepper & basil (fresh or dried). And then cover tomato with a little bit of mozarella cheese.... throw in the broiler until cheese is browned and melted.

Stuffed Tomatoes
 
1. Cut the top of the tomato off - kind of like carving the top of a pumpkin.
 
2. Scoop out the inside of the tomato. I have a special utensil that looks like a mini ice cream scooper ~ works great.
 
3. Melt some butter with garlic salt, parsley, ground black pepper and any other herbs or spices you wish to use.
 
4. Pour your melted butter mixture in the tomato. Fill the tomato about 1/4 or 1/3 full.
 
5. Fill the rest of the tomato with seasoned bread crumbs. I noticed that it tastes better if you make your own bread crumbs. (take a piece of buttered toast with ground black pepper, basil, parsley and garlic salt and mix in the blender)
 
6. Top off your tomato with Parmesan cheese and a basil leaf.
 
7. Bake - until cheese is melted. I always bake mine in my toaster oven 400 degrees - usually takes about 8 minutes.

LOL!! Sure, but you may be disappointed because I don't make this stuff every day... the tortilla recipes... maybe once a year. You would be eating mostly vegetarian foods. But I do like to cook for other people, espeically guests. Hard to believe considering I used to hate cooking. Years ago my ex live in boyfriend made the mistake of asking me what was for dinner.... I made him pears and rice. He wore the apron after that.

I would go for Veggies.............My son is going to college next weekend, and when I do decide to enter into a relationship again, he will have his house, I will have mine........No reason for me to cook anymore
