Cheese And Sherry Pate Time: 10mins Serves: 4 Ingredients: 75g hard goats or sheeps cheese, 75g blue cheese, like gorgonzola or roquefort, a small bunch of chives, 6 fresh sage leaves, 1 clove garlic, 3 - 4 tablespoons sweet sherry. To serve: Water biscuits, breadsticks or oatcakes Method: Remove any ring from the cheeses. Trim, rinse and dry the chives and sage and peel the garlic. Then put them all into a food processor or blender and process them to a thick paste. Add the sherry gradually, blend until smooth, then spoon into a dish to serve. If not using it immediately, cover with cling film and store in a cool place but not a fridge. Serve with the biscuits. |
