Tom... an Ostler was originally a stableman at an Inn, but the term was used for stablemen in lots of industries. My grandfather was an Ostler at Liverpool Street Railway Station in Manchester (first passenger station in the world and still there) before WW1. They used the horses to 'shunt' the carriages around the yards there. A Dreyman, or it might be Drayman was a man who delivered the barrelled beer to the pubs from the breweries, by horse and cart. I believe the term originally comes from the word Draughtsman, being the name given to the same men, who drove the large horses, which were known as Draughthorses (heavy horses)

Before waxing tearful about horses remember they were filthy depraved beasts falling dead from heart attacks and piercing opposing teams in the chests with their shafts.
 
They gave ample employent to "crossing sweepers" filthy little depraved boys whose sole occupation was to sweep a path through the dung which fouled the roads to enable their better sorts to cross.
