Vegetable Stuffed Meat Cups


Ingredients

Vegetable Stuffed Meat Cups
(or Pie)

INGREDIENTS:

1 pkg. (10 oz.) frozen mixed vegetables
1 Cup shredded Swiss cheese (or Cheddar cheese)(4 oz)
1 1/2 pounds ground beef
1 pouch Campbell's Onion Soup and Recipe Mix (Campbells is best in this case)
1 egg
1/2 cup fresh bread crumbs (or crackers)
2 tablespoons ketchup

Procedure

Place vegetables in small microwave safe bowl. Cover with vented plastic wrap; microwave on HIGH 3 1/2 minutes or until tender-crisp. Drain. Add 1/2 cup cheese; toss to mix well. Set aside.

In a large bowl, combine beef, soup mix, egg, bread crumbs and ketchup; mix well. Press into 9 inch glass pie plate, and up sides. Add vegetable mixture.

Either bake in oven at 350 until sides pull away from pie plate, or place in microwave and cook on HIGH for 10 minutes and continue until meat pulls away from sides of plate. Sprinkle remaining cheese on top and reheat until melted. Let stand for about 10 minutes before cutting into servings.

This is one of the absolute best, kid tested, quick recipes I know of. Plus it is a lot more filling than one would think.

Note: When baking this dish in the oven, there is no need to cover it. Just bake at 350 for 20 - 30 minutes and then check every 10 minutes or so, until the sides (hamburger) pulls away from the dish. At this point the pie is done.
