1 cup Fat Free Mayonnaise
3 Tbsp. white vinegar
1 tsp salt
1 tsp celery salt(I never found it, so I used celery flakes)
1 tsp onion powder
1/4 tsp pepper
2 hard boiled eggs, chopped
Sugar Free Sweet Relish(optional)
Yellow Mustard to taste
3 lbs. potatoes, cooked, peeled, & cubed

In large bowl combine mayonnaise, vinegar, salts, pepper, eggs, relish, yellow mustard. Add potatoes. Toss to coat well. Cover & refrigerate for at least 4 hours. Yields: 8 cups

**The original recipe actually calls for 1 cup minced onion and 2 cups of sliced celery.

Also, I found that things went together much better with cooking the potatoes ahead of time, refrigerating them and THEN cutting them up. Cuts down on the chill time in the fridge.
